Oven-Roasted Vegetables

Ingredients: 

2 lbs fresh thickly sliced vegetables
3/4 cup Wish-Bone Italian or Olive Oil vinaigrette dressing
Vegetables: eggplant, Zucchini, yellow squash, large mushrooms, red/yellow/bell peppers, red onions


  1. Toss vegetables with dressing in large, shallow alum.dish or plastic bag. 
  2. Cover or close bag & marinate in refrigerator, turning once, up to an hour. 
  3. Preheat oven to 425. 
  4. Put vegetables & marinade into roasting pan & roast 20 min or until veg are tender, stirring once.
