125g butter
2 tbsp golden syrup
125g chopped pecans
18 slices day-old French bread
6 eggs
350ml milk
1 tsp vanilla extract
1 tbsp sugar
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
Mix brown sugar, butter and golden syrup in medium saucepan. Heat until melted and dissolved.
Pour into baking dish, sprinkle with half the pecans.
Arrange half the bread slices in a single layer, sprinkle with remain pecans, then layer the rest of the bread.
Whisk the eggs, milk and vanilla, pour over the bread, and press lightly to moisten the bread.
Mix the sugar, cinnamon and nutmeg, and sprinkle over the bread.
Cover and chill for 8-24hrs.
Bake at 175 for 30-40 minutes uncovered, then leave to stand for 10 minutes.
