Paleo Pumpkin Chili

Ingredients: 

1 tablespoon coconut oil
1 medium yellow onion, diced
4 garlic cloves, minced
1 pound organic grass-fed ground beef
2 cups chopped zucchini, cauliflower, or vegetables of choice
2 cups pumpkin puree
1 cup vegetable, beef, or chicken stock
2 14-oz cans fire roasted tomatoes
¼ teaspoon cinnamon
¼ teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon smoked paprika
½ teaspoon sea salt (more to taste)
