Pan-seared Lemon Sole

Ingredients: 

1/4 cup all-purpose flour
4 sole fillets
1/2 tsp kosher sale
4 1/2 tbs unsalted butter
1 lemon, ends trimmed
2 tbs capers, rinsed & drained


  1. Season sole with salt & pepper. 
  2. Coat the sole with flour, shaking off excess, & set aside. 
  3. Melt 1 bs butter in large skillet over medium heat. 
  4. Slice lemon into 12 thin circles & add them to skillet. 
  5. Cook until lemon is lightly browned, about 2 min. 
  6. Push lemon to side of skillet & add sole. Might need to cook in batches. 
  7. Cook until,sole is the same color throughout & flakes easily, about 2 min per side. 
  8. Add remaining butter & capers to skillet. 
  9. Remove from heat & tilt skillet to swirl butter until it melts. 
  10. Transfer to plates & top with capers & butter.
