Parker House Rolls

Ingredients: 

1 can evaporated milk (sego)
3 T yeast or 3 pkgs
3/4 C warm water
1 tsp sugar
1 C sugar
1 TBS salt
3/4 C oil
2 C cold water
4 eggs (beaten)
12 C flour


  1. scald the sego milk and remove from heat
  2. dissolve yeast in warm water
  3. add 1 tsp sugar to yeast mix
  4. add 1 C sugar, salt, & oil to the scalded milk
  5. add cold water & eggs
  6. pour milk mixture into a mixing bowl such as a kitchen aid or boshe.
  7. using the whisk attachment blend in 4 cups of flour 2 cups at a time.
  8. add yeast mixture
  9. switch to the kneading attachment
  10. add in enough flour to make dough (approx. 8 additional cups)
  11. Knead for 10 minutes
  12. put in a greased bowl, cover, and let rise until doubled
  13. punch the dough down and let rise again
  14. roll, cut, & butter
  15. fold cut pieces and place side by side in greased 13x9 pan
  16. bake at 400 degrees for 12-15 min

Makes about 5 dozen
