Passover Flourless Chocolate Cupcakes

Ingredients: 

1 1/2 cups (10.5 oz) bittersweet chocolate chips (or
semisweet or milk chocolate)
1 cup (2sticks) butter cut into pieces
4 whole eggs
4 egg yolks
1/2 cup sugar
2 tbsp cocoa powder, sifted
1 tsp vanilla extract


  1. Preheat oven to 375. 
  2. Put muffin liners into muffin pan. 
  3. Melt chocolate chips & butter over double boiler (can use microwave). 
  4. Set aside melted chocolate to cool. 
  5. Pin a large bowl, cream the eggs, egg yolks, & sugar. Once it's thick & a pale yellow, gently fold in the remaining ingredients & then the melted chocolate. 
  6. Gently spoon the batter into the muffin cups. Fill almost to the top, since there is no leavening. 
  7. Bake for 20 minutes. 
  8. Remove from oven & let cool for 5 minutes in the muffin pan. 
  9. Remove from pan & let them finish cooling on a rack. 
  10. Dusr with powdered sugar.
