Passover Mandelbread

Ingredients: 

2 3/4 cups cake meal
1/2 tsp salt
3/4 cup potato starch
1 tsp cinnamon
2 cups sugar
1 stick margarine, room temperature
6 eggs
6 oz chocolate chips
1 cup nuts (any type)


  1. Preheat oven to 350 & line baking sheet with parchment paper. 
  2. In medium bowl, mix cake meal, salt, potato starch, & cinnamon. 
  3. In large bowl, use mixer to cream margarine & sugar. 
  4. Add eggs, one at a time, to butter mixture  
  5. Add dry ingredients. 
  6. Mix in chips & nuts. 
  7. Oil hands & shape into 2 loaves. 
  8. Sprinkle sugar cinnamon combo on top. 
  9. Bake 45-50 min. 
  10. Remove from oven, slice, & bake fo 5 min to get crispy. 
  11. Cool on rack.
