Pasta Caprese with homemade tomato sauce by Naomi

Ingredients: 

- Fresh Basil leaves
- Teaspoon of sugar
- Balsamico vinegar
- Any pasta you like but preferably Fussili/Penne
- Mini mozarella
- 6 big meat tomato;s (blanched, without the skin and chopped to pieces, without the seeds)
- Salt
-Pepper
- 2 or 3 garlic
-Olive oil (mild version, not extra vergine)
- red chili pepper
- finely chopped onion or sjalot
- Cherry tomatoes split in half


Directions

  1. Cook the pasta al dente with some salt
  2. Blanch the tomatoes, de skin them, remove the seeds and chop them in cubes
  3. Chop the fresh basil leaves (keep some for decoration) 
  4.  crush the 2-3 garlic gloves 
  5. Chop the sjalot or onion
  6. chop the red chilli remove the seeds
  7. Put some olive oil (3 table spoons) in a solid baking pan
  8. put the sjalot, garlic and red chilli into the pan. Let them caramelise
  9. Then add the chopped tomatoes to it.
  10. Add basalmico vinegar, salt and pepper (depends on your own taste how much) 
  11. Let the sauce simmer for 5 minutes
  12. than add the Cherry Tomatoes in half to the sauce, simmer for 1 minute

Plating

Put the pasta on the plate. Add the sauce. at last you add the mini mozarella on the top with some basil leaves. 

Servings: 2 persons 

Preparation Time: half an hour
