Pasta Carbonara

Ingredients: 

1 large Onion finely chopped
½ tablespoon Extra Virgin Olive Oil
90 g Parma Ham visible fat removed and ripped into pieces
3 large organic egg yolks
35 g freshly grated Parmesan Cheese
10 g fresh chives finely chopped
15 g Flat-leaf parsley roughly chopped
12 Drop Tabasco
400 g Linguine
salt and freshly ground black pepper
