Pasta: Crispy Quinoa Bake/

Ingredients: 

1 C quinoa, uncooked
1 T plus 2 tsp extra virgin olive oil, divided
2 C chicken stock
1 C onion, diced (about 1 medium)
1/2 green pepper, chopped
2 cloves garlic, finely chopped
1 C zucchini, cubed (about 2 small)
1 can (15 oz) black beans, rinsed and drained
1 can (4 oz) diced green chiles
1 can (28 oz) diced tomatoes, drained
1 C frozen corn
1/2 tsp ground cumin
1 tsp oregano
1 tsp chili powder
1/2 lime, juiced
Salt
2 C shredded Monterey Jack cheese
