Peach yogurt cake (gluten free)

Ingredients: 

1 cup and 2 tablespoons gluten-free multi-purpose gum-free flour (I use King Arthur)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon chia seeds
3 teaspoons hot boiling water
1/2 stick unsalted butter, softened (4 tablespoons)
3/4 cup sugar
1 teaspoon pure vanilla extract
2 eggs
1/4 cup Greek yogurt
4 medium peaches, sliced
