Peeper Lemon Chicken

Ingredients: 

4 Chicken thigh fillets
Pepper
Lemon Juice
Shredded Cabbage
Red & Yellow Capsicum pieces
1/2 red onion slices


  1. Marinate chicken with plenty of pepper and a fair bit of lemon juice
  2. Line tray with aluminium foil
  3. Sprinkle shredded cabbage on oven tray
  4. Add pieces of capsicum
  5. Put chicken onto tray and put slices of onion on top of each chicken piece
  6. Cover with aluminium foil on top of tray
  7.  
  8. At 180 degrees, cook chicken in pre heated oven for 15 mins
  9. Taken tray out of oven,
  10. Move chicken pieces about a bit so that they don't stick to aluminium foil on tray
  11. Cook at same temperature for another 15 mins
  12. Turn oven off and let chicken continue cooking in residual heat
  13. Serve
  14.
