Penang/ red curry- my style

chicken cut into thin slices cut sideways
Red curry paste
Coconut milk
Brown sugar
Lemon grass-cut into long strips
Peanut butter

Red chilli balls

  1. Heat 4-5 tablespoons of oil.
  2. add red curry paste and allow to stir fry till it releases its scent.
  3. add chicken( cut into sideway thin slices).
  4. add some lemongrass if available.
  5. now add the coconut milk( shake can enough plenty of times beforehand-makes a difference!)
  6. add just a tspoon of peanut butter( not too much).
  7. MUST ADD brown sugar!( atleast 1-2 tablespoons).
  8. allow to simmer. 
  9. Add eggplant at the end.
  10. Enjoy with white rice.
  11. ( i have experimented with adding some sour cream and a splash of lemon-comes out nice too).
