Pie Crust: Flaky, Tender, & Workable


½ cup each: white rice flour, sorghum flour, finely ground almond flour
¾ cup tapioca starch (yes, it must be tapioca, it will not work with another starch, trust me I tried and it failed miserably)
1½ teaspoon xanthan gum
1 teaspoon salt
⅔ cup shortening
6+ tablespoons ice water
