Pierogi

Ingredients:

DOUGH:
2 cups of all-purpose flour
2 yolks
1 cup of boiled water that has cooled to a warm temperature (not hot, not cool)
¼ cups of vegetable oil

FILLING:
1 package of cream cheese
2 medium potatoes, boiled
1 small white onion (adjust as you like) diced and fried until golden
¼ cup of bread crumbs
Salt & pepper

  1. Pour the water and oil into the flour and yolks, you want to aim for a doughy consistency that isn’t too sticky. As you’re kneading the dough, it should start to unstick from the bowl.
  2. Cover the bowl with plastic/cellophane and set aside at room temperature.
  3. Start mashing up the potatoes with the cream cheese. Add in a moderate amount of onion. Then start pouring in a bit of the bread crumbs to add some firmness to the mixture.
  4. Once you have all your pierogi properly sealed and ready to go, dump them into the boiling water for about 4-5 minutes.
