Poisson Cru/I'a Ota

Ingredients: 

8 oz fresh fish cut into pieces 1" x 1/2" x 1/2" (roughly, pinkie finger sized pieces)
3 limes, juice only
1 tsp Hawaiian salt
1/4 tsp black pepper
1/2 C sliced carrot, matchstick size
1/4 C sliced onion, cut on the diagonal
1 C chopped tomato, cut the same size as onion
1 C sliced cucumber, cut the same size as onion and tomato, no seeds
2 C coconut cream; if not fresh, use frozen Hawaiian Sun in package
