Pork Medallions in Orange Sauce

Preperation and Cooking time: ~30 minutes.


1 tablespoon Canola Oil
1 Pork Loin (cut into 8 medallions)
3/4 cup Orange Juice
1/4 cup Soy Sauce
1 teaspoon Corn Starch

  1. Fry medallions in oil, then remove.
  2. Mix orange juice, soy sauce & corn starch.  Bring to a boil.
  3. Return pork to skillet and simmer 5 minutes to enfuse flavors.
  4. Serve over rice, pasta, or mashed potatoes.
