Pork Shoulder

Ingredients: 

Pork shoulder (1/2 lb per person)
Chopped Sage, Rosemary and Thyme - about 2/3 tbsp each
Fennel Pollen (you can buy this online and it is well worth it) - 2 tbsp.
1 tbsp. salt, 2 tsp. pepper
1/2 - 3/4 cup red wine or white wine
olive oil
