Potato Leek Soup

Ingredients: 

2 tbsp olive oil
1 large white onion, sliced
10 cloves garlic, smashed
500g (1 lb) leeks, trimmed, cleaned, and sliced
750g (26 oz) potatoes, cleaned and cut into bite-sized chunks
3L (12 cups/100 fl oz [US]) vegetable stock
Freshly ground black pepper, to serve
