Pumpkin Apple Snickerdoodles

Ingredients: 

Cookies:

3/4 cups unsalted butter (melted)
2/3 cups pumpkin Purée
1 1/2 cup granulated sugar
1 egg
1 1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
2 teaspoon cream of Tartar
1 teaspoon baking soda
2 2/3 cups all purpose flour
2 medium apples (peeled, cored, and diced)
1 1/2 cups white chocolate chips

Topping:

1/3 cup granulated sugar
1 1/2 teaspoon cinnamon


Prep. Time: 20 minutes
Cook time: 7 minutes
Total Time: 27 minutes

Cookies:

Step 1:
Preheat oven to 350
In a mixing bowl beat melted butter, pumpkin, and sugar until smooth and creamy.
Add egg, vanilla, cinnamon, cream of Tartar, and baking soda then mix well. Gradually add in flour mixing on low until incorporated. Stir in apples and chips.

Toppings:

Step 2:
In a small bowl stir together sugar and cinnamon.

Step 3:
Scoop heaping tablespoons of dough into cinnamon sugar and sprinkle to make sure it is evenly covered. Drop onto silicone or parchment paper lined cookie sheets and bake for 8 minutes. They will appear slightly underdone but this is what you want for a soft, chewy texture. Allow to cool a few minutes before transferring to cooling racks.
