Pumpkin Bread

Notes: 

Makes 2 loaves
Original recipe did NOT call for pumpkin pie spice but I added that because I have some. If you don't, it will be tasty without it.
I have also made this recipe lower fat by substituting applesauce for half of the oil.
I usually don't have pumpkin pie filling so I use just plain canned pumpkin and it is fine.
The recipe says you can bake it in a 9x13 pan, but I've never done that so I don't know about the length of time necessary to bake it.

Ingredients: 

3 1/3 cups flour
3 cups sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon pumpkin pie seasoning
1 1/2 teaspoon salt
2 teaspoons baking soda
4 eggs
1 cup vegetable oil
2 cups pumpkin pie filling


  1. Mix the dry ingredients together in a large bowl
  2. Make a whole in the center of the dry ingredients and add the eggs, oil, and pumpkin.
  3. Stir until blended.
  4. Pour into two loaf pans
  5. Bake at 350 for 1 hour.
