Pumpkin Bread Pudding

Ingredients: 

For Pumpkin Bread
4 Tbsp. unsalted butter, softened, plus more for the pan
1 3/4 c. all-purpose flour
1/2 tsp. fine salt
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. freshly grated nutmeg
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1 1/2 c. sugar
1/4 c. vegetable oil
scant 1 c. canned pumpkin purée
2 large eggs

For Spicy Caramel Apple Sauce
1 c. heavy cream
1/2 c. apple juice
1 star anise
1 (1") piece fresh ginger, peeled and chopped
4 cloves
2 cinnamon sticks
1/8 tsp. freshly grated nutmeg
1 1/2 c. sugar
1 Tbsp. apple cider vinegar
1 Tbsp. apple schnapps

For Bread Pudding
unsalted butter for pan
8 c. 1/2" cubed Pumpkin Bread or other bread
2 c. heavy cream
1 c. whole milk
1 vanilla bean, split and seeds scraped
6 large egg yolks
1/2 c. sugar
3 Tbsp. pure maple syrup
1 c. canned pumpkin puree
2 Tbsp. bourbon
Spicy Caramel Apple Sauce
shelled pumpkin seeds (optional), for garnish
