1 1/2 cup flour
3 tsp baking powder
1 tsp salt
1/2 cup oil
1 1/2 cup sugar
3 eggs
1 tbs vanilla
1 cup pumpkin purée made of 1 cup pumpkin boiled with 1 1/2 cup water and half a stick of butter until water reduce to about 1/4 cup then purée
Stir together flour, baking powder and salt, set aside.
Mix oil and sugar at medium high speed for only 2 minutes, add eggs one at a time, add vanilla, don't over mix.
Add dry ingredients all at once, add pumpkin purée, don't over mix.
Bake at 350*F for 45 minutes.
