Pumpkin Gingerbread

Ingredients: 

1 cup whole wheat flour
1/2 cup oat flour (or oats ground in coffee grinder)
1/4 teaspoon salt
1 teaspoon baking soda
1/2 teaspoons ground ginger
2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup (240 ml) pumpkin purée
1/4 cup oil
1/4 cup plain yogurt
1/2 cup dark brown sugar
1/2 cup (120 ml) molasses
1 tbsp ground flax seed mixed with 2 tbsp water (or, you can use one egg)


  1. Combine all ingredients in bowl and mix.
  2. Pour into greased 9 x 5 x 3 pan.
  3. Bake at 350 for about 45 minutes or until inserted toothpick comes out clean.
