Pumpkin Pie Oats in the Crockpot

Notes: 

Serves 6-8

Ingredients: 

2C steel cut oats
1 15oz can of pumpkin(or about 1 3/4C)
1 400 mL or 14 oz can full fat coconut milk plus enough water to make 7C(about 5 1/4C water)
1 tbsp vanilla
1 tbsp + 1 tsp pumpkin pie spice
1/2C honey or maple syrup(or leave unsweetened and add after it’s been cooked)
