Pumpkins Souffles

Ingredients: 

6 to 8 jack be littles
4 eggs, separate yolks and whites
1 cup brown sugar
1 cup evaporated milk
3 cups smashed pumpkin
3/4 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon nutmeg
2 tablespoons white sugar


Heat oven to 425 degrees.

Core out jack be littles. Throw away the tops. Egg wash over top of rim.  Dip into sugar

Mix 4 yolks in blender with brown sugar.  Add evaporated milk.  Add pumpkin. Add spices.  Mix well in blender.

In another bowl, preferably copper), mix together 4 eggs whites and white sugar.  Pour a small amout of the egg white mixture into the pumpkin mixture.  Then, the bowl of the pumpkin mixture back in the egg white mixture.

Spoon finished mixture into jack be littles and top with more granulated sugar

At first you are to bake at 425 degrees for 10 minutes.  Then, bake at 320 degrees for another 15 minutes.

Serve immediately
