Quinoa With Pistachios

Ingredients: 

1/5 cups quinoa, soaked in filtered water for 4 hours to overnight
13/4 cups water
sea salt
1/2 cup raw pistachios


  1. Drain quinoa, and rinse well and drain again.
  2. Place in a 2 quart saucepan.
  3. Add water, large pinch of salt and bring to a boil. Cove reduce heat and simmer for 15 minutes. Let quinoa stand for 5 to 10 minutes until liquid is absorbed.
  4. Preheat oven to 300. Place nuts on baking sheet and raoast until lightly golden and gragrant, 6 to 8 minutes. Remove from baking sheet and carsely chop. At to quinoa, and fluff with a fork. Season with salt.
