2-3 Persian cucumbers diced small (or half of a large English seedless)
3 roma tomatoes, diced small
1/2 of a small red onion ,diced fine (or use shallot)
1 cup (25 grams) fresh finely chopped flat leaf parsley (Italian parsley)
1/2 cup (13 grams) fresh finely chopped mint leaves
6 tablespoons (90 ml) of dressing, recipe below
Vinaigrette
6 tablespoons(90 ml) olive oil
3 tablespoons (45 ml) fresh lemon juice
2 large garlic cloves, finely minced or pressed
1/2 teaspoons salt
1/4 teaspoon black pepper
