1 cup quinoa
1 small white onion
1 1/4 cup water
1 1/4 cup tomato sauce
Salt and pepper to taste
2 T nutritional yeast
Daiya cheese
2 avocados
Add water tomato sauce minced onion quinoa and salt and pepper in saucepan and bring to a boil
Reduce heat cover and simmer til liquid absorbed
Set oven to 350
Trim off pepper tops and deseed
Fill peppers with quinoa, sprinkle tops with nut yeast and cheese
Cover with foil and bake for an hour
Remove foil and broil for 3 minutes
Garnish with mashed avocado
