Ingredients: 

1 cup uncooked quinoa
2 large sweet potatoes (approximately 1 lb.), peeled and cut into ¾ inch cubes
2 Tbsp. balsamic vinegar
2 Tbsp. organic coconut oil, melted
1½ Tbsp. unsweetened coconut flakes
3 Tbsp. sunflower seeds
1 Tbsp. sesame seeds
¼ tsp. sea salt
