Rack of Lamb

This recipe uses my Adriatico topping as an ingredient.

Ingredients: 

2 Rack of Lamb
Salt and Pepper
Adriatico topping
1 tbsp Dijon mustard
1 tbsp white wine


  1. Preheat oven to 375
  2. Preheat medium frying pan to sear.
  3. Season racks with salt and pepper.
  4. Sear racks on both sides approx 3 min.
  5. Place on baking sheet, mix dijon mustard and wine together to make a paste, smear paste on lamb, cover generously with adriatico topping.
  6. Bake racks in oven until desired temperature is achieved, I prefer 125-130 f.
  7. Remove and allow to rest for 5 minutes before cutting.
