Raw Chocolate Mousse Pie

Ingredients: 

1 1/2 cup almonds
1 1/2 cup coconut flakes
1/2 tsp sea salt
1 cup dates
1 ripe banana
1 tsp vanilla extract
2 avocados
1/2 cup cacao powder
1/2 cup water
cacao nibs (optional)
coconut oil


  1. Grease pie pan with small amount of coconut oil (very important to remove pie easily)
  2. Soak 1/2 cup dates in 1/2 cup water and let sit
  3. Process almonds in food processer
  4. Add coconut flakes, sea salt, and 1/2 cup dates in with almonds and process until you can press crust together without it falling apart
  5. Form crust in pie pan, press down with thumb all around to keep it from crumbling apart when you cut it
  6. Mash up the banana until it has consistency of baby food and mix with vanilla
  7. Process the remaining 1/2 cup dates taken out of the water with the banana and vanilla mix
  8. Add the avocado (without the skin) and cacao powder in and process again
  9. Add 1/2 cup of (date) water in and process briefly
  10. Add filling to pie crust and decorate top with cacao nibsĀ 
  11. Refrigerate one hour before cutting
  12. Keep leftovers in fridge and enjoy!
