Ingredients: 

Wild Salmon with Mashy Peas, Pea Shoot Salad & Grilled Lemon
Serves: 2

Salmon:

2 6-ounce portions fresh wild salmon
1/2 teaspoon kosher salt
2 tablespoons vegetable oil

Mashy Peas:

1/2 pound fresh English peas, shucked
1 clove fresh garlic, finely chopped
1/4 cup extra virgin olive oil
1 teaspoon fresh tarragon, finely chopped
1 tablespoon fresh Italian flat leaf parsley, finely chopped
1 teaspoon fresh chives, finely chopped
1/2 teaspoon fresh basil, finely chopped
1/4 teaspoon fresh mint, finely chopped
1 teaspoon fresh lemon juice
1 tablespoon plus 1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Pea Shoot Salad:

2 cups fresh pea shoots
1/2 cup fresh snap peas, thinly sliced on a bias about 1/8” thick
1 teaspoon fresh lemon juice
2 teaspoon extra virgin olive oil
Pinch kosher salt
Pinch fresh ground black pepper
1 lemon, cut in half
