3 shallots
3 garlic cloves
4 large plum tomatoes or 1 good quality tin of whole plum tomatoes
5 tbsp extra virgin olive oil
50ml water
1 tbsp red wine vinegar
2 tsp honey
Handful of parsley
Handful or thyme
Pinch or salt and pepper
