One 12-ounce package sliced bacon, chopped in 1/2-inch pieces
2 pounds red creamer potatoes
2 tablespoons salt
2 tablespoons whole-grain mustard
1 tablespoon Dijon mustard
3 tablespoons chopped pepperoncini peppers
2 tablespoons apple cider vinegar
1/4 teaspoon freshly ground black pepper
1 tablespoon maple syrup
2 teaspoons olive oil
1/4 cup chopped chives
1/4 cup chopped parsley
