1/2 cup olive oil or salad oil
1 large unpeeled eggplant cut into 3/4 inch cubes
3 medium size onions, coarsely chopped
Garlic 3 Clove (5gm), pressed
1 large green pepper, seeded and cut into strips
2 cans Italian style tomatoes
Sugar 2 Teaspoon
Basil 1 Tablespoon
Parsley 1/2 Cup (16 tbs), finely chopped
Ripe olives 1 Can (10oz), drained
Pimentos 1 Can (10oz), drained
1 pound rigatoni or large shell macaroni
Parmesan cheese 1 Cup (16 tbs), grated
Salt To Taste
Pepper To Taste
