Rigatoni with Rich Tomato-Mushroom Sauce

Ingredients: 

6 2.5 oz patties boca burger "no fat original" or other textured soy protein
1 cup canned diced tomato
1-1/2 cups canned tomato sauce
3 cups sliced fresh mushrooms
1/2 cup diced roasted onions (page 22 everyday cooking)
1 garlic clove minced
1/2 teaspoon dried oregano
2 tablespoons chopped fresh basil
salt and pepper
1 pound rigatoni


Directions

  1. Cook boca burgers according to package directions. Chop int 1/2 inch dice
  2. In a large saucepan, combine chopped boca burger, diced tomato, tomato sauce, mushrooms, roasted onions, garlic, and oregano.
  3. Bring to a simmer, cover, and adjust heat to maintain a simmer.
  4. Cook stirring occasionally, until the sauce is thick and tasty, about 15 minutes.
  5. Stir in basil, saon to taste with salt and pepper.
  6. prepare pasta and serve tossed with sauce.
