Ingredients: 

2 oz Novo Fogo Barrel-Aged Cachaça
0.5 oz Combier Pamplemousse
0.33 oz Galliano Ristretto
0.25 Rossbacher Austrian liqueur


Stir with ice and strain into a chilled cocktail glass, then top with Malbec/chocolate foam. 

To make the foam:

  1. Mix 4 oz of Malbec wine, 0.5 oz of Scrappy's Bitters - Chocolate, 4 egg whites, 2 oz lemon juice, 2 oz simple syrup (3:2), and 2 oz water.
  2. Use a fancy whipper like iSi to automatically charge it with gas, or whip the heck out of it by hand until it looks like foam.
  3. Chill for a few hours to let it firm up. This will make enough for 10 - 20 cocktails, depending on your appetite for foam.
