Roast Pork Loin with Grilled Peaches & Ginger

Ingredients: 

4 (6 oz) pork loin chops
1 tsp ground ginger
1 tsp ground black pepper
1 tsp ground coriander
1 tsp of chopped garlic
3 tbsp extra virgin olive oil
4 peaches, halved
1" fresh ginger, grated
1 tbsp honey
1 lemon, juiced
1/2 cup chicken stock
Fresh chervil, for garnish
Salt and Pepper, to taste


Mix 1 tbsp of extra virgin olive oil with spice and garlic.  Marinate pork chops in mixture for 10 minutes.

Mix remaining olive oil with fresh ginger, and marinate peach halves for 10 minutes.  Season both chops and peaches with salt and pepper.

Grill chops to medium and grill peaches until tender.

Toss peaches in honey and a little olive oil

Slice meat and serve with 2 peach halves garnished with chervil
