Ingredients: 

3 medium red or golden beets
1 tablespoon safflower oil (or another high-heat oil)
1 cup cherries
¼ cup olive oil
2 tablespoons balsamic vinegar
¼ cup red wine vinegar
1 tablespoon Dijon mustard
½ teaspoon dried basil
½ teaspoon dried oregano
freshly-ground black pepper
¼ teaspoon salt
6 cups arugula
½ cup cashews
