roasted kale, sweet potato, & black bean quinoa

Ingredients: 

1 cup quinoa
2 cups chicken broth {or water}
1 bunch/package of kale
2-3 sweet potatoes
Real Salt & pepper
1 can black beans
1/3 cup blanched almonds {optional}


  1. Combine quinoa and chicken broth {or water if you don’t have broth!} in a pan over the stove,
    and cook according to package directions. i bring it to a boil, then cover and let it simmer for
    10-15 minutes.
  2. bake kale using these directions – preheat the oven to 350 degrees F. spread kale out on a
    sprayed baking sheet. toss with some olive oil and salt. bake for 20 minutes until crisp, turning
    the leaves halfway through. add a sprinkle of parmesan cheese if desired.
  3. peel and dice sweet potatoes into small squares. spray a baking sheet and spread them out.
    drizzle with olive oil, sprinkle with Real Salt and pepper, roast at 375 degrees for 30 minutes
    until soft.
  4. combine cooked quinoa, baked kale, and roasted sweet potatoes in a bowl, mixing to
    combine. add one can of black beans if desired.
  5. enjoy a delicious, filling, and healthy meal!
