Roasted Salt and Vinegar Potatoes

Notes: 

Allow: 90 minutes to prepare

Trick: when smashing potatoes, put your finger next to it so that you can get them all to an even size and bake at the same rate.

Ingredients: 

2 lbs small Red Potatoes, approx 2"x1" (you want small)
1 1/4 Cup Table Salt

6 Tbsp Olive Oil

3 Tbsp Malt Vinegar, divided

Oh MY! These are amazing!

I didn't have Malt Vinegar and instead used Cider Vinegar - just as good.

Will most definitely make again.
