Saag, or palak, dishes are spiced purees of spinach or other greens common in northern India. They often contain additional ingredients such as potatos, fresh cheese, chicken or chickpeas to make a more substantial dish. Ingredients: 

2 Tbs Oil or ghee
1 Onion, chopped
6 cloves Garlic, minced
1 Tbs Gingerroot, minced
2 tsp Coriander, ground
1/2 tsp Turmeric
1/4 to 1/2 tsp Cayenne pepper (optional)
1 pound Spinach, chopped
1 cup Water
1 1/2 tsp Salt
1 cup Yogurt
1/4 cup Cream (optional)
