Salads: Chinese Cabbage Salad

Notes: 

I make this salad with nappa or red cabbage, depending on what looks freshest at the market. Or both can be used together. Cabbage is part of the brassica family of vegetables, and is extremely high in ? and very nutritious. People with hyperthyroid problems need to avoid consuming food from this group when it's raw. In this case I suggest a different salad or steamed cabbage and a green salad with the other ingredients below.

I usually pair this with gluten-free fish cakes, which you can also find in my recipe collection. Bon appetit

Ingredients: 

Salad:
2 1/2 lb nappa cabbage or red cabbage
5 green onions
1/4 C sliced almonds
1/2 C sesame seeds, fresh toasted

Dressing:
3 T all natural peanut butter + grapeseed oil to equal 3/4 C)
1/2 C xylitol
1/4 C rice vinegar
2 T Bragg's liquid aminos


Finely chop cabbage of choice and green onions.  Mix together. Mix all dressing ingredients in small blender.  Add to salad, toss, and garnish with the almonds and sesame seeds.  I like to add cranberries and cilantro or mint sometimes, depending on my mood.
