Salmon with Black Quinoa and Spinach

Just used one can of salmon. Will use bell peppers instead of cayenne next time.

Ingredients: 

1 cup Black Quinoa
2 Tablespoons Extra Virgin Olive Oil
1 cup Red Onion, Diced
1 whole Fresh Cayenne Pepper, Minced
1 can (about 14.75 Oz. Size) Alaskan Pink Salmon, Drained
4 cups Baby Spinach
½ teaspoons Coarse Salt
½ teaspoons Freshly Ground Pepper
¼ cups Fresh Lemon Juice
