1/4 cup EVOO
1/2 tsp salt
1/2 tsp ground black pepper
1 tbsp minced fresh rosemary
8 lemon slices (2 lemons)
1/4 cup lemon juice (1 lemon)
1/3 cup Marsala wine (or white wine)
4 tsp capers
4 pieces of aluminum
1. Brush top and bottom of salmon fillets with EVOO and season with salt, pepper, rosemary
2. Place salmon on foil, top with 2 lemon slices, 1 tbsp of lemon juice, 2 tbsp of wine, 1 tsp capers. Wrap tightly in foil packets.
3. Place grill pan over medium high heat. Place foil packets on the grill and cook for 10 min.
