1/2 cup milk
3/4 of a small container cream cheese, cut into bits
1 tbsp olive oil
spices, herbs
tomatoes, chopped
1 onion, chopped
Tortillas
Combine eggs, milk and cream cheese in a bowl.
Season with salt and pepper to taste and set aside.
Carefully heat oil in a nonstick skillet over medium low heat.
Saute onion and tomatoes.
Add eggs and cook slowly, stirring constantly with a wooden spoon until eggs are just set but creamy. (Do not overcook.)
Warm tortillas in microwave for 10 seconds.
Place egg mixture onto tortilla.
Wrap and enjoy.
