Seitan Cutlets

Notes: 

Yield: 6 to 8 cutlets, about 1 1/2 pounds.

Ingredients: 

7 cups unbleached bread flour
3 cups whole-wheat bread flour
4 1/2 cups water
1 1/2 teaspoons sea salt
8 cups vegetable stock or water
1/4 cup tamari
1 piece of kombu
1 piece of wakame
