Sesame Chicken Edamame Grain Salad

Ingredients: 

(15.9 ounce) package of grain/brown rice
4 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons low-sodium soy sauce
1 cup shelled edamame
12 ounce package rainbow slaw (green cabbage, red cabbage, broccoli, carrot)
2 cups cubbed chicken
2 teaspoons toasted sesame oil
2 teaspoons sesame seeds
salt and pepper
1/3 cup chopped cashews, to garnish


  1. Make the grain according to the package. Make sure that it is dry and cool before uing in the salad. 
  2. In a large serving bowl, whisk olive oil, lime juice, and soy sauce.
  3. Season with salt and pepper.
  4. To the bowl, add grain, breaking up any large clumps.
  5. Add the edamame and salw mix to the bowl.
  6. Season with salt and pepper.
  7. Toss to combine.
  8. In a small bowl, toss the chicken, sesame oil, and sesame seeds.
  9. Top the grain salad with the chicken and toss to combine.
  10. Granish with cashews.
