Shortcut Bahn Mi with Pickled Carrots and Daikon

Ingredients: 

For pickled vegetables:
• ¾ cup shredded carrots
• ¾ cup thinly sliced Persian, Kirby, or European cucumbers
• ½ cup shredded daikon radish
• 2 Tbsp unseasoned rice wine vinegar
• 2 Tbsp sugar
• ¼ tsp kosher salt
For spicy sauce:
• ½ cup mayonnaise
• 1 Tbsp finely chopped scallions
• 2-3 Tbsp sriracha or other chili sauce, to taste
For pork:
• 1 Tbsp peanut or vegetable oil
• 4 garlic cloves, finely chopped
• 3 Tbsp finely chopped scallions
• 1 lb ground pork
• 2 Tbsp Asian fish sauce
• ½ tsp black pepper
• ½ tsp kosher salt
• 1 tsp sugar
• ½ cup chopped fresh basil
• Finely grated zest of 1 lime
• Juice of ½ lime
• 6 small hero rolls
• Fresh jalapeno, thinly sliced and seeded, for garnish
• Mint sprigs, for garnish
• Cilantro sprigs, for garnish


Directions

  1.  In a medium bowl, toss together carrots, cucumbers, daikon, vinegar, sugar, and salt. Let stand at room temperature for at least 30 min.
  2. In a small bowl, whisk together mayonnaise, 1 Tbsp of scallions, and 1-2 Tbsp chili sauce, to taste. Cover tightly and set aside.
  3. Heat oil in a large skillet over medium-high heat. Add remaining 3 Tbsp scallions and garlic. Cook, stirring for 1 min. Add pork and cook, breaking up with a fork, until no longer pink, 7 – 10 min. Stir in 1 Tbsp chili sauce, fish sauce, pepper, salt, and sugar. Remove from heat and stir in basil, lime zest, and lime juice. Let cool 5 min, then add mayonnaise mixture.
  4. Fill bread with pork mixture. Top with jalapeno, mint, cilantro, and pickled vegetables.
